At the time, Nick didn't know anything about GMO products, organic foods, etc. But then he started to learn more about food, like organic foods, as well as how the US food system had become rather tainted, though Nick notes, "It's a necessary evil because of our population and all that stuff in a lot of ways, but in a lot of ways too it can be fixed."

Nick then got into the beef business, selling to restaurants, hotels, golf courses, and more. He was able to make money on those sales, but he was growing the business and building the Arcadia brand. One thing Nick sold was bone broth, which has been shown to help with diseases like Crohn's, Colitis, and other health issues/auto immune disorders. In fact, Nick would have people, with tears in their eyes, relay how his bone broth had changed their life, allowing them to feel so much better.
